True to its name, Seasons Restaurant has just unveiled its new springtime menu, deliciously announcing the arrival of the bright, verdant flavors that sing of spring. Under the direction of Chef de Cuisine James Waters, the signature dining venue at Four Seasons Residence Club Aviara delivers farm-to-table cuisine with an accent on our coastal location and emphasis on our close relationship to local purveyors.

Nowhere is this more evident than in some of the newest additions to Seasons dinner menu. Spring farro risotto, for instance, is enhanced by fresh peas, fava beans, artichokes and pecorino cheese, while the “Chef’s Whim” vegetable plate boasts a hand-selected panoply of produce from the weekly farmer’s market. And what speaks more of “springtime cuisine” than lamb? Chef Waters’ interpretation is a three-day braised Colorado lamb shank with a rich mole, pickles and fresh tortillas.

For the absolute freshest and brightest of preparations, consider Sunday evening’s “Field to Fork” fixed-price menu. Guests can enjoy a three-course, market-driven menu featuring locally sourced ingredients. Displaying creativity inspired by the best of the season, Chef Waters and his team will dazzle the palate with these special preparations. The cost is $35.00 per person ($18.00 additional per person for the wine pairing); available on Sunday evenings from 5:00 pm until 9:00 pm until May 31st, 2018.
